Raw or Cooked, Sweet or Not: How the Water Constitutions Should Use Sugar and Fresh Food

Refined, high-energy, quickly absorbed cooked food helped humanity survive. As production advanced, though, refined sugar — once scarce — became so common that it now drives many chronic diseases and accelerates aging. Fast-absorbed food carries the character of Fire, which is why it is a poor fit for the hot-stomached Earth types. This article looks at the other side: raw and cooked food for the Water constitutions, and how Renotonia and Vesicotonia should use sugar.

In Summary

  • A classical formula for people worn down by long illness — with abdominal pain and poor appetite that will not recover — ends by dissolving malt syrup into the decoction.
  • Sweetness relaxes a tense stomach and supplies quick energy for the gut to work. For the cold, sluggish Water types, a little sweet food when exhausted genuinely helps.
  • The problem patterns: reaching for sweets before the meal, or skipping meals and living on sweets. Easy in the moment, weakening over time.
  • Right use: a small snack, or a little dessert after a meal, when tired.
  • The diet chart marks raw and cold food as unsuitable — but eating only cooked food makes the gut sluggish and unbalances nutrition.
  • The fix is simple: take raw food out of the refrigerator 20–30 minutes before eating and let it reach room temperature.
  • When Prof. Baek (Vesicotonia) increased fresh food: less heat and sweating, a calmer mind, and gut function closer to normal.

Sugar as Medicine

There is a well-known classical formula, Sogeonjung-tang (소건중탕 小建中湯), used after a serious illness or when chronic illness has worn the body down — when the abdomen aches, appetite falls away, and recovery stalls. Its instructions end in an unusual way: after decocting the herbs, dissolve malt syrup into the liquid and take it.

The reason is that sweetness relaxes and loosens a stiff, tense stomach, and supplies energy quickly so the gut can start working again. In that role it is used as medicine.

I mention the formula to explain the principle, not as something to take; whether any herbal formula is appropriate is a question for the KTM physician treating you.

The principle carries over directly. For Vesicotonia and Renotonia, whose problem is a cold and underpowered stomach, a little sweet food when they are exhausted is genuinely helpful.

Where It Goes Wrong

The same instinct produces two characteristic mistakes.

Eating sweets before the meal, or more than the meal. People with weak digestion often do not feel hungry clearly. When hunger finally arrives, instead of giving themselves time for a proper meal, they grab something sweet for a quick lift.

Skipping the meal and eating only sweets. When tired, Water types often use poor digestion or busyness as a reason to live on sweets and miss real meals. It feels easier for a while; over time it weakens the stomach further.

The right place for sweetness is a small snack, or a little dessert after eating, when you are tired. Prof. Baek admits that without something sweet he cannot write well, so this is offered with sympathy rather than as a prohibition.

Raw Food: The Twenty-Minute Rule

The Water-type diet chart lists raw and cold foods as unsuitable. But eating only cooked food makes the digestive tract sluggish and can unbalance nutrition. Even when you eat for your constitution, departing too far from food in its natural state is not good, and strict adherence belongs to particular situations and illnesses.

The method for including fresh and raw food is simple: take it out of the refrigerator 20 to 30 minutes before eating and let it come to room temperature. The problem for these constitutions is the cold, not the freshness.

What Changed When He Stopped Eating Only Cooked Food

Prof. Baek tries to keep to his constitutional diet and had a real aversion to raw food. Seeing the effects of cooked and refined food, he gradually increased fresh food — and noticed changes over a fairly short period:

  • Less heat in the body. His stomach is cold and sluggish, but his hands, feet and face ran hot; the heat and sweating eased.
  • A calmer mind, in proportion to the drop in heat.
  • Better stomach and bowel function. Digestion still fails at times, but he is closer to normal.

That is consistent with his longer account of what happened when he followed the diet too strictly.

Summary

The Water constitutions are right to be drawn to warmth and a little sweetness, and wrong when either becomes the whole diet. Use sugar as a restorative rather than a meal, take the chill off raw food rather than avoiding it, and the chart becomes something to live with rather than against.
